Quarantine Eats: Quinoa Pizza

By now, I’ve heard of pizza in multiple forms, 2 of those being just regular pizza and one of the most popular: cauliflower pizza.

But the other day, I stumbled upon QUINOA PIZZA.

I was so intrigued by this that I just had to give it a try.
No, it doesn’t cut all the calories out like cauliflower does, but quinoa does have a ton of healthy features: it’s gluten-free, packed full of protein, contains all 9 essential amino acids AND it’s also high in fiber, iron, potassium, calcium, etc, etc.
To sum it up, quinoa is good for your body.

So, Saturday night, Matthew and I whipped it up and were pleasantly surprised, which is why I have to share it with you all.

Here’s what we used to give us plenty of pizza for 2:

For the crust:

  • 1 cup Quinoa
  • 1 cup Water
  • 1 tsp Baking Powder

Seriously, that’s it.
& the toppings are obviously always your choice (it’s a pizza, afterall), but we used:

  • Spinach
  • Mushrooms
  • Grilled Onions
  • Cheese
  • Nutritional Yeast
  • Hot Sauce
  • Red Sauce

& here’s how we did it:

  1. Soak the quinoa in a bowl of water for 6 to 8 hours (just do this first thing in the morning when you’re making your coffee!)
  2. When dinner time is near, preheat oven to 425 degrees F and prepare a pan with aluminum foil or parchment paper (grease well!)
  3. After soaking, drain the quinoa and then place in blender with baking powder (we also added some garlic power & onion powder to the mix). Blend until smooth
  4. Scoop quinoa mixture into prepared pan. Smooth across pan
  5. Bake in oven for 15 minutes before removing and flipping quinoa base to the other side. This shouldn’t be hard! Just make sure that the quinoa base is firm enough to flip before trying
  6. Bake for 5 minutes before removing from oven
  7. Top with your choice of ingredients!
  8. Bake with toppings for 10 to 15 minutes – you’ll pretty much know when it’s done (especially if you have cheese πŸ™‚ )
  9. Remove from oven, let cool (or not), & enjoy!

The pizza didn’t get as firm as I’d hoped, so I did just enjoy it with a fork; however, I could easily pick it up like a regular pizza if desired! Just kinda fell apart as I bit into it. But overall, I thought this quinoa pizza was delicious!

Also, I have to give a shoutout to this New Belgium Sour IPA – omg this beer was SO good. I obviously always recommend enjoying your pizza with a beer. So if you like sours, give this one a try!
