Quarantine Eats: Choco Chickpea Cookie Dough Bites

Lately, I have been seeing chickpea cookie dough recipes everywhere.
I was shocked when I first saw it because I didn’t understand how chickpeas could be turned into anything sweet enough to eat as a dessert.

And I proved myself right when I first tried to make chickpea cookie dough. Gross.
I was about to give up on chickpea as an ingredient for any dessert when I found Texanerin’s “The Original Peanut Butter Chocolate Chip Cookie Dough Bites.”

They looked so chocolatey and delicious and I just had to try them.
So, I did – with just a few alterations.

Here’s what I used to make 8 of these delicious bites:

  • 1/2 can of chickpeas (drain and pat them try w/ a paper towel!)
  • 1/4 cup peanut butter
  • 1 tsp vanilla
  • 1 tbsp honey
  • 1 tbsp maple syrup
  • 1 tsp baking powder
  • 1/4 cup dark chocolate chips

& here’s what I did:

  1. Preheat oven to 350 degrees Fahrenheit and prepare a pan with aluminum foil
  2. Blend the chickpeas in a food processor (I actually used a NutriBullet)
  3. Once well blended (no whole chickpeas in there), add the rest of the ingredients, except for the chocolate chips
  4. Blend together until well-mixed
  5. If the mixture is warm from blending, let cool for a few minutes before folding in the chocolate chips
  6. Scoop rounded spoonfuls of the dough onto the pan and form into balls with your hands (you should get about 8 balls out of these ingredients)
  7. Bake in oven for ~10 minutes
  8. The balls will still be soft when you remove them from the oven, but trust me: they should be done after 10 minutes
  9. Let cool slightly before munching!

FINALLY.
A delicious chickpea dessert!!!
I am so happy I was able to mask the chickpea flavor this time around. Just when I had lost all hope, chickpeas totally redeemed themselves as a dessert ingredient.
